Ingredients

  • inch pieces Yukon gold potatoes or Russet potatoes - 1½ inch pieces
  • Vegetable broth or chicken broth
  • Heavy cream
  • Butter

Instructions

  • Wash, peel, and chop potatoes into even 1½-inch pieces
  • Heat soup pot and add vegetable broth to cover potatoes completely
  • Bring to a boil on medium heat, then boil for 15-20 minutes until potatoes are fork-tender
  • Remove pot from heat and use immersion blender to blend until desired consistency
  • Add cream and butter, stir, and simmer for 5 minutes on low heat
  • Season to taste and serve hot with desired toppings
