Ingredients

Yukon gold potatoes
or Russet potatoes - 1½ inch pieces
Vegetable broth
or chicken broth
Heavy cream
Butter
Instructions
Wash, peel, and chop potatoes into even 1½-inch pieces
Heat soup pot and add vegetable broth to cover potatoes completely
Bring to a boil on medium heat, then boil for 15-20 minutes until potatoes are fork-tender
Remove pot from heat and use immersion blender to blend until desired consistency
Add cream and butter, stir, and simmer for 5 minutes on low heat
Season to taste and serve hot with desired toppings
