Ingredients

  • Essential Base Ingredients Use a standard muffin recipe for proportions:
  • cups All-purpose flour sifted for a lighter crumb
  • cup Granulated sugar
  • ½ tsp Salt
  • 2 Eggs
  • 1 cup Milk
  • 2 tsp Baking powder ensure fresh
  • ½ cup Vegetable oil
  • Key Flavor Ingredients:
  • 1 tbsp Molasses to add to batter
  • ¼ cup Coarse sugar for topping before baking
  • Optional Add-ins choose one or mix:
  • Chocolate chips milk or dark
  • Blueberries fresh or frozen
  • Chopped tree nuts walnuts, pecans, macadamia - ensure finely chopped

Instructions

  • Preheat your oven (refer to your base muffin recipe for temperature).
  • Prepare your muffin tins (grease or line with paper cups).
  • Measure your ingredients carefully, using quality ingredients.
  • In one bowl, mix together the wet ingredients (eggs, milk, vegetable oil, and molasses).
  • In another bowl, whisk together the dry ingredients (flour, sugar, salt, baking powder).
  • Slowly combine the wet ingredients with the dry ingredients. Mix just until they are combined. DO NOT overmix, as this can lead to tough muffins.
  • Gently fold in any optional add-ins like chocolate chips, blueberries, or nuts at this stage.
  • Fill each muffin cup about two-thirds full to allow for rising.
  • Generously sprinkle coarse sugar on top of each muffin before baking.
  • Bake in the preheated oven until the muffins are golden brown and a toothpick inserted into the center comes out clean. (Refer to your base muffin recipe for approximate time, but monitor closely as ovens vary). Ensure even baking by checking placement in your oven.

Notes

Tips & Variations:
Dairy-Free Option: Easily substitute cow's milk with almond milk, coconut milk, or soy milk.
Alternative Flours: You can try alternative flours like almond flour or gluten-free mixes, but expect changes in texture and density. Be mindful of allergies.
Allergen Awareness: Be mindful of nuts, dairy, and soy, especially if using add-ins or alternative ingredients. Clearly label for others.
Storage: Store cooled muffins in an airtight container at room temperature for about 2 days, or freeze for up to 2 months. Thaw overnight in the fridge or warm gently in the microwave.
Toppings: Beyond the coarse sugar, consider adding chopped nuts, a drizzle of honey, or a dusting of cinnamon sugar after baking.
Pairing: Enjoy these warm muffins with a fresh cup of medium roast Arabica coffee for the full Dunkin' experience.
